Behind the Beer returns for another week. In this episode, Matt reflects on one of our original hop-forward beers in the Firestone Walker portfolio…Union Jack IPA.
“Despite being a West Coast craft brewery, we didn’t come out with our first West Coast IPA till 10 years after brewing our first beer. In 2006, we finally stepped into the world of IPAs,” said Matt.

Matt’s passion for hops is clear as he talks through the recipe and brewing process that makes Union Jack such an iconic West Coast IPA…
“Union Jack is all about the hops. There are four additions on the hot side and two additions on the cold side, essentially making it a double dry-hopped beer. It features the four C’s – Cascade, Centennial, Chinook and Citra, as well as Simcoe and Amarillo.
With notes of grapefruit, pine, and tangerine, this beer is jammed with hoppy flavors. Combined with a lean malt base and caramel malts for a little bit of sweetness and that beautiful amber color, Union Jack gives us an IPA done the way the original IPAs were meant to be,” said Matt.
